In his youth, Tommy Prosser was asked that age-old question: “What do you want to be when you grow up?” His answer surprised his loved ones. “I want to be happy and share this happiness with other people,” he declared. In becoming a chef, he believes he has found a profession which enables him to do just that.
Born in England and trained in the French culinary tradition, Tommy has been involved in the hospitality industry for more than 18 years. With qualifications in cooking, management and kitchen supervision, he competed in national and international cooking competitions in Bournemouth, Birmingham and London. Tommy has worked in such celebrated British establishments as The Waterside Inn, a 3-Michelin-starred classical French fine diner, and the 1-starred Gravetye Manor. Both properties featured in Relais & Chateaux. He has since worked in 5-star hotels, 3-cup and 3-star cafes, and brand new ventures around the world.
Tommy moved Down Under in 2010, taking on roles in top Melbourne restaurants for two years. Landing the title of Executive Chef at the renowned Single Origin Roasters in Sydney in 2012, he connected with the local scene and its growers and artisans. This eventually spurred him into his own business ventures, Hospitality Works and Black Market Bacon.
Now with an Aussie chef wife and son, Tommy calls Australia home. He is engaged as a private chef for high-end VIP clients in Sydney’s Eastern Suburbs. A nationally renowned food demonstrator, he also works closely with primary producers, hunting clubs and various government bodies to educate consumers and showcase their products through live cooking demonstrations, recipe development and video content. Past corporate clients include Horticulture Innovation Australia, Australian Mushrooms, Australian Truss Tomatoes, Bite Communications, Background CC, Australian Avocados, OZBreed, Dalya Foods, Australian Hunters International, Home & Gift Warehouse and Celebration Cooking.
Tommy’s goal is to inspire both the home cook and fellow professionals to think about where their food comes from, and to have fun in creating dishes for their family, friends and customers – all while sharing the happiness a good meal can bring.
